Banana Bread

Ingredients:

1/2 cup granulated sugar
2 tablespoons brown sugar
5 tablespoons unsalted butter, softened
1 egg plus 2 egg whites
1 1/3 cups mashed ripe bananas (about 3)
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup chopped walnuts (optional)
6 ounces mini chocolate chips (optional)

Directions:

Preheat oven to 375 degrees Farenheit. Spray 9 x 5 inch loaf pan with cooking nonstick cooking spray. Beat sugars and butter in a large bowl with electric mixer until creamy. Add egg, egg whites, and bananas.

In a separate bowl, combine flour, baking soda, and salt; stir in banana mixture just until dry ingredients are moistened. Fold in walnuts and chocolate chips if desired. Pour in prepared pan.

Bake 1 hour. Cool in pan 10 minutes. Remove to wire rack; cool completely. To serve, cut into 16 slices or freeze for up to 2 months.

This is awesome!  Have you ever made it with bananas which were frozen and then thawed?  I have three in my freezer for "just in case" moments and want to use them, but don't know how they'd turn out.
