These are quick and great comfort-food. I put white chocolate chunks in this batch but if you use chopped fruit instead, they're dairy-free Smiley

-Mix 1 medium egg with 2tsps vanilla extract, 1 cup of peanut butter and half a cup of canola oil.
-Add 1 cup of dark brown sugar, 1 cup of chocolate chunks or fruit, 1 cup of oats and half a cup of plain flour.
-Shape into balls, flatten and place on a baking tray.
-Bake for 15mins at 180 degrees C (350 F).
-Enjoy while still warm!

They look amazing! However I have a boyfriend with a severe egg allergy. Anyone know how I could do this without them? I'm still struggling through learning eggless baking.

I'm not sure how it would turn out with this recipe but you can substitute chia seeds for eggs in most baking and recipes. Place 1 tablespoon of chia seeds in a cup and add 3 tablespoons of water. Let it sit for 15 minutes. 1/4 cup of this gel type mixture equals about 1 egg. I hope that helps.

If your oven temp is Celsius, I think I'd need to bake at 350 degrees Fahrenheit, yes?
