We're always out and about on weekends, but want to maintain healthy eating, so we usually pack a cooler to go with us.  This weekend, we're heading to the beach for a bit, so I thought something light and tasty would be great.

Made these little side salads in jars.  Layered dressing, mushroom slices (as a moisture barrier), lettuce and toppings.  When we're ready to eat, we'll just mix them up and chow!

What else would work as a moisture barrier do you think? While I could eat pounds of cooked mushrooms, I don't like them raw in a salad.

I think cucumbers would totally work!  Or even if you put ALL of the toppings/fixins on top of the dressing, below the lettuce.  So create a barrier from something like tomatoes, cucumbers, cheese, etc.  As long as the lettuce isn't soaking in the dressing, I think you're good to go.

I was just thinking the same thing Smiley of course I am 6'4" and weigh a little over 200lbs... Second thought, maybe I should stick to that size. Huh
