Side Salads in Jars

We're always out and about on weekends, but want to maintain healthy eating, so we usually pack a cooler to go with us.  This weekend, we're heading to the beach for a bit, so I thought something light and tasty would be great.

Made these little side salads in jars.  Layered dressing, mushroom slices (as a moisture barrier), lettuce and toppings.  When we're ready to eat, we'll just mix them up and chow!

Hubby says he could eat about 15 of these.  Next time, I'm apparently using bigger jars, haha.

What else would work as a moisture barrier do you think? While I could eat pounds of cooked mushrooms, I don't like them raw in a salad.

Would cucumbers work?

I think cucumbers would totally work!  Or even if you put ALL of the toppings/fixins on top of the dressing, below the lettuce.  So create a barrier from something like tomatoes, cucumbers, cheese, etc.  As long as the lettuce isn't soaking in the dressing, I think you're good to go.

I was just thinking the same thing of course I am 6'4" and weigh a little over 200lbs... Second thought, maybe I should stick to that size.
