I'm always trying out new breakfast recipes and I think I've found a KEEPER!  Grin

Oatmeal Cups



 I told my kids that they were banana chocolate chip muffins (hey, they are in muffin shape!) and they couldn't get enough.  Wink

I found the recipe at Green Lite Bites.  I don't normally have almond milk on hand so I substituted skim milk with 3 TBP sugar and they came out great. The cups are very banana-y and super moist. I do recommend letting them sit for a good 5 minutes after you take them out of the oven. They are lava hot!

My 2 kidlets scarfed down 6 of these with a side of fruit with no trouble. If I had told them that they contained oatmeal, they wouldn't have touched them at all. Hah, score one for a sneaky momma! LOL

If you leave out the chocolate chips, you could have tons of variations. The batter is also easy to half to make more than one flavor. I plan to try making cranberry pecan, cinnamon apple walnut, and brown sugar (subbing out the white sugar mentioned above) cinnamon raisin.

Lindy, you need to try these! Both of my kids raved over them. The recipe makes 16 cups so I had enough for 3 breakfasts! Cheesy
