I love pimento cheese!  I've always had the store bought kind and I've been wanting to make my own.  I eat mine as a sandwich spread which my husband thinks is odd but I love it that way.  Now I'm motivated to make my own!   Smiley

Having found some pimentos in the big city (no less than 4 jars now reside in the pantry) I can't wait to make this recipe.  I will note that while doing pimento research I have seen the suggestion of using roasted red bell pepper in place of pimento.  I may have to do a taste comparison for research purposes.  yummy, yummy research Cheesy

alteredmommy--I did the same research and bought a huge jar of roasted peppers...they are way cheaper than the tiny jar of pimentos...I am going to make my next batch with them...
