I know it's a few months late but oh well  Grin

I work third shift (graveyard) and I work with a great group of people that love to have pot-lucks for EVERY holiday.  We even make up holidays in order to bring in food.  For Cinco De Mayo I made Margarita Cake.  Everyone loved it Smiley




Before the topping


With whip cream and lime


Mmmm yummy

RECIPE


CAKE:
1 cups granulated sugar
cup (1 stick) butter, softened
tsp baking soda
tsp salt
3 large eggs
1 Tbs grated lemon peel
1 Tbs fresh lemon juice
2 cups flour
1 cup lemon or plain yogurt (I used lemon)

LIME GLAZE:
cup superfine sugar (I just used powdered sugar)
2 Tbs fresh lime juice
1 Tbs water
1 Tbs tequila

STEPS:

1. Preheat oven to 350F. Grease and flour a 9x13-inch cake pan.

2. Prepare cake: Combine sugar, butter, baking soda and salt in a mixing bowl and beat until blended. add the eggs 1 at a time, beating well and scraping the bowl after each addition. Mix in the lemon zest and lemon juice. Add the flour and yogurt alternately, beating well after each addition.

3. Spoon the batter into prepared pan. Bake for 25 to 30 minutes or until a wooden pick inserted in the center comes out clean. Cool in the pan on a wire rack for 15 minutes.

4. Prepare glaze: Combine sugar, lime juice and water in a saucepan and mix well. Cook until the sugar dissolves, stirring frequently. Stir in the tequila.

5. Assembly: Invert the warm cake onto a serving platter and brush with the glaze until it is absorbed. Let stand until cool. Slice and garnish each serving with a twisted lime slice and a dollop of whipped cream.

Servings: 16 (You can see I cut mine larger - we don't have too many workers on third shift so we got bigger pieces  Grin)

I would love to work where you do.  Sounds like awful hours but in good company .  Cake looks yummy.

The hours aren't so bad once you get past the first month and you get on a regular sleep/eating routine.  Since it tends to be a lot slower at night I get more time to surf craftster  Cheesy

I saw this in my email this morning and I had to try it!
I didn't have limes or tequila, so I used orange zest instead in the cake and fresh squeezed orange juice and baja rosa in the glaze.
it was delicious! next time I'm going to plan ahead more and try the original recipe

A cup is a cup it's a US (imperial) style of measurement Tongue A US cup equals 250ml, 1/2 cup is 125ml and so on. A Tbsp is 15ml and a tsp is 5ml.
