I saw a recipe for this German Pancake in the Family Fun Magazine... it looked so good, I just HAD to try it! Of course I don't seem to know how to follow a recipe to save my life, so I tweaked it a little bit! They turned out really good, and it made for a great Sunday morning breakfast!
I started off by peeling, coring and slicing two small apples. I coated these in cinnamon and splenda ('cuz I realized that I was out of sugar).
I melted a couple tablespoons of butter by placing the butter in the glass pie pan, and putting it into the oven (which stayed at 400 degrees this whole time). Once the butter was melted, I spread out the apple slices along the bottom.
I baked these apple slices for about 10 mintues until the butter was bubbling and golden brown in color. This is when I poured the pancake batter on top of the apples and baked for another 30 minutes.
I will say that I had too many apples, or not enough batter, so a lot of the apples didn't stick to the pancake (as you can see in the top photo)... but it was still tasty! Also, I was out of sour cream, so the batter wasn't as fluffy as I would have liked, but it was still soft on the inside with a crisp top.
The only downside, is that I feel like I could have eaten three of these... but I had to split it with Ryan since he was there when I made it!
