This is the recipe that I use!! this has taken me so many trials and errors... I've made it so much I can make it without the recipe now. lol... yeah, I'm one of "those" people. I loosely based it on a link I'll put at the bottom...
Black Bean Brownies!!
1 (15.5 ounce) can black beans, rinsed and drained
1/4 cup flaxseed meal + 2 teaspoons melted coconut oil.
3 tablespoons applesauce
1/4 cup + 3 TBLS cocoa powder
pinch salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon vanilla extract
dash of almond extract
1/4 cup white sugar
1/2 cup honey (this isn't TECHNICALLY vegan, I think agave might work fine. or brown sugar)
3 teaspoons instant coffee
1/2 cup chocolate chips
Directions
Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 square baking dish.
Combine the all ingredients EXCEPT chocolate chips; blend until smooth; pour the mixture into the prepared baking dish. Sprinkle the chocolate chips over the top of the mixture.
Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan, about 30-45 minutes.
The coffee is the reason that this doesn't taste so weird. As LoveNtheOcean said, they aren't going to be super light and fluffy like the ones with dairy, but I've always loved the fudgy dense ones.
I'm allergic to dairy. Eggs, milk, the whole nine yards, so I had to revamp the original recipe too.
