I was just invited to Bunco at a friend's house and had to whip up a snack to bring. Smiley Mini bell peppers, rinsed and tops chopped off, and then I mixed low sodium turkey bacon in a bowl with laughing cow wedges and just a squirt of relish. I haven't got to try them yet, but hubby says they are delicious!

These look delicious! My local 99c Only store frequently has these peppers. We usually just grill them with a bit of olive oil and salt and pepper, but I think next time I'll try your recipe. Thank you for sharing!
