I know this is probably old news to everyone but me. BUT maybe there's a poor lost soul out there living in the dark like I was. i have been a pescetarian for almost 8 years and this is the first time i have heard of making your own meatless meatballs! I had them today and ran home to google a recipe. I found one that sounded similar like the original recipe that the woman said to me and they turned out great. stupid simple and so delicious!!!

Here's the recipe the way I did it for anyone that's interested
MAKES 14
2 slices of wheat toast
1/2 cup walnuts
1/3 cup parmaesan
2/3 cup mozzarella
2 eggs
1.5 cups vegetable broth or water
salt, pepper, garlic powder
dried herbs to taste, I used rosemary, parsley, and basil
Put walnuts and toast in the processor until the are finely ground
Whisk eggs and cheese, add nut/bread mixture and seasonings.
Let firm up in refrigerator for 20-30 minutes
Preheat oven to 400 degrees
Spray pam on 8x8 oven safe dish
Make small 1-1.5 inch balls (i used a small ice cream scoop)
Place evenly spaced in dish and bake for 30 minutes.
Add broth and bake 30-35 min at 350 degrees and you're done!!!
Enjoy however you want them

They are awesome plain or with sauce.
