makes 12 muffins

1/2 cup brown sugar
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup chocolate chips
1/4 cup crushed cashews
2 tablespoons of shredded coconut

1 egg
2 tablespoons of melted butter
1/2 cup apple sauce
1 teaspoon vanilla

1 cup oatmeal
1 cup milk

Preheat oven to 400
Mix milk and oatmeal in small bowl and set aside
Cream butter and sugar then add egg vanilla and apple sauce.
Mix dry ingredients together then add to wet a little at a time until you have a nice thick porridge like consistency.
Spoon into muffin tin lined with lightly greased paper cups.
Bake for 20 - 25 minutes @ 400 or until toothpick inserted comes out clean

* I like to substitute some of the flour and sugar for ground chia seed making these into super healthy delicious muffins.

I've never baked with cashews but they are my favorite nut. I bet they'd lend an interesting flavor to a muffin. Smiley
