Hi all!  Kombucha is my new favorite drink.  I bought it once in the grocery store but it was too strong so I began to make it myself.  Its pretty cheap and easy to make too.  Basically you make a gallon of sweet tea, and then put a kombucha "culture" in and let it set for 3-10 days.  The longer it sits the more it goes from sweet to vinegary.  I like mine best at around 7 days.  I put a more detailed recipe/tutorial on my blog.

hmm never heard of this? but we make our own beer, wine, mead and soda (rare), so why not?  I ll have to learn more...

following your bloggity blog.. Grin      how does this taste?  Like tea..vinegar?  I've never heard of it?  

I really want to try to make my own hard cider....does this turn to alcohol?

Kombucha has its own flavor, unlike any other drink. It can be citrusy, floral, effervescent, sweet, and tart. The most similar thing to relate it to, would be a high quality beer; perhaps an IPA. In the first few days of brewing it tastes sweet and light, but if you left it for 14 days, it would taste like straight vinegar.  It has a negligible alcoholic content.

How do you make it/keep it fizzy?
 
I made my own kombucha awhile back, but remember it wasn't too bubbly when I put it into bottles.

I think the main factor to how fizzy your kombucha is, is the SCOBY. Depending which bacteria are most prevalent will change the characteristics of the kombucha.  Some will make it more floral, some more bitter, some make it more carbonated, some don't.  You may just need to try a new SCOBY.  I started mine with a store bought bottle of kombucha and its always gotten nice and fizzy.

Once you do get fizzy kombucha, when you bottle it make sure to fill it very full and put the cap on tight.  Less air space at the top should help it keep its pressure better.  And of course don't agitate it or it will go flat like pop does.
