Made these for dessert last night.  So yummy!



Supplies
Apple (big surprise, yes?)
Ground cinnamon
Cinnamon stick
Orange
Optional:  granola, vanilla ice cream, yogurt

Steps

Preheat oven to 425

Cut the top off of the apple.  Core and scrape inside of apple.  Be careful not to pierce the sides or cut all the way through the bottom.  You're basically creating an apple bowl or shell in this step. Smiley

Dispose of core.  Dice the insides of the apple.

In a saucepan, saute the diced apple with cinnamon (or toss with cinnamon and microwave for 2 - 3 minutes, if you're short on time).

If you're feeling particularly fancy, pluck out the stem from the top of the apple and peel stripes onto the side of your apple.

Return the apple insides to the apple shell.  If you'll be adding granola, do it at this time.  Put your apple "lid" on top.  Again, if you're in the fancy mood, add a cinnamon stick as your new stem. Grin

Place apple on a glass baking dish and bake.

While baking, cut and juice a fresh orange.  Reduce the orange juice in a sauce pan over medium heat.  Use the reduction to baste your apple every 5 or so minutes.  It gives it an extra bit of sweet and a zesty pep, too.

Bake for 20 or so minutes, until desired shell tenderness.

If desired, serve with vanilla ice cream or yogurt.  Put in your belly.

mmmhhhmmm, it looks and sounds so delicious!

I love baked apples, so thanks for this recipe!


(Oh, you could serve it with vanilla sauce instead of ice cream too.)
