So here is my first attempt at Red Velvet Cupcakes, and second attempt at cupcakes altogether (first one went horribly wrong!). Its a Nigella Lawson recipe and I found an adaptation here: http://www2.readersdigest.ca/food/blog/2010/11/09/nigella-lawsons-red-velvet-cupcakes/

Unfortunetely they didn't have the right type of food colouring in my local shop so they ended kind of brown, but hey-ho it's the taste that counts and they came out rather delicious!





And of course the cat did feel the need to help!

I love Nigella and red velvet cupcakes! Smiley

I was always "required" to do some baking for family functions when I lived at home with my parents. I remember my recipe calling for 2 bottles of red food coloring which always made it the deep red. I'm not sure how the color paste would differ in that respect.

I just wish I had a family that would eat all of the sweets I could create. They completely lose interest after one serving. *sigh*

Aah I see - the silly recipe I used only said a 15ml - I'll remember that next time!
