I've had an intense week and wanted to try to have a relaxing sunday and give myself a "treat meal" so I made some vegan pancakes Shocked) These guys were the easier to flip and stayed in the proper shape, as opposed to dripping all over the place and sticking to the pan. Someone just asked me for a gluten-free option, so I said they could try switching out the oats and wheat flour for buckwheat flour, rice flour, almond flour...etc. Bob's Red Mill makes some good gluten-free flours.



Ingredients

1 1/4 cup rolled oats
1/2 cup whole wheat flour
2 tsp Baking Powder
1/2 tsp Vanilla Extract
Couple pinches of Sea Salt
Optional: 1/4 tsp Cinnamon, 2 tbs finely shredded Coconut
1 1/2 cups Almond Milk (Or Rice, Hemp, Soy)
2 Ripe Bananas
Fresh or Frozen Berries (I used cherries, raspberries, blueberries and blackberries)
Toppings: Maple Syrup or just use the juice from the berries and drizzle on top. You can also sprinkle with some oats, coconut, hemp seeds or cinnamon.
Extra Virgin Olive Oil or Coconut Oil (for skillet)

Oooh.. This looks really good! My husband and I went vegetarian for a while and now eat very little meat. He is also very conscious of how many eggs he's eating so this would be a great Saturday morning treat. I bet it is a great way to use up bananas that are starting to turn too.

I think the coconut would be too sweet for him but I'll have to try some that way.

I like both of the pictures. Nothing like a tower of pancakes. Your fish plate is also really cute!

Cheesy thanks... they were very good! (actually I obviously couldn't eat them all so I have a ton left in the fridge hehe)

Oh, that's perfect then! These are quite fluffy so he shouldn't miss any eggs in this. And yeah, the reason I went ahead to make these were because I had a couple of bananas that were gettin' brown.

I use unsweetened coconut, but definitely omit them if you wish. I'm not even sure that I actually remembered to add them in any way. Enjoy if you end up making them some time. --Clare
