This recipe is so yum, it is easy to make, and oh by the way, it is healthy!

Blueberry Crunch
1 1/2 cups Old Fashion Oatmeal
1/2 cup whole wheat flour
1/2 cup chopped almonds or walnuts
1/3 cup of flax seed or safflower oil
3/4 pure maple syrup or honey
2 cups of fresh or frozen blueberries
2 1/2 Tablespoons corn starch
3/4 cup cold water

Preheat oven to 400F.

In medium saucepan put blueberries with 1/2 cup of maple syrup/honey, and bring to boil. Dissolve corn starch in cold water, and add to blueberries. Cook and cover on medium heat, stirring frequently till thickens.

In a large bowl mix oatmeal, flour and nuts. In a seperate small bowl mix oil and 1/4 cup maple syrup/honey. Add liquid to oatmeal mixture, mix with hands creating a crumb mixture.

Use an 8x8 dish and spray with cooking spray. Press with wet hands 2/3 of the oat mixture to create a sort of crust. Pour the blueberry mix over top, and then top with remaining oat crumbs.

Bake at 400F for 20-25 minutes until browned slightly. Let cool, cut into squares and enjoy!

Has vitamins, protein, fiber, antioxidants. Dessert, without the guilt. What's not to love?
Enjoy!

Mmm! That looks so good! Have you tried it with any other kinds of berries or fruit? Just curious. Oh my gosh I want some!

Although I am a fan of the blueberry, I bet it would work with any berries.  Smiley

I am really glad that you posted this recipe, but I am also sad about it because now I am probably going to eat the majority of the pan :oP
