Long Time Lurker, First Time Poster!
So, a couple of nights ago, I decided to make my mom and myself dinner.
I had no idea what to do, and I was terrified (I'm one of those people who sticks to the recipe no matter what).
Armed with a pretty empty fridge, I got to work.Ingredients
1/4 of a bell pepper, chopped
slice of red onion, chopped
Around 5 or 6 mushrooms, chopped
A tiny bit of chili powder
A tiny bit of cinnamon
One sheet Puff PastryWhat I Did (with as many corresponding pictures I could put together)
*Preheated the oven to 400 degrees F
*Set the puff pastry to defrost (if the pastry's frozen like mine was)
1. I put all of the vegetables together in a bowl and mixed them up.
2. I put them in a pan and cooked them for a while. Not too long, but the mushrooms browned, if that provided any benchmark. I also put the cinnamon and chili pepper in here and mixed it all up. I put some oil in the pan to keep it from sticking.
3. Put the cooked vegetables back into the bowl they were mixed in and add in the two beaten eggs. Mix.

4. I suggest lightly greasing whatever pan you decide to use to bake this creation, but lining the pan with parchment paper will probably do the job.

5. Lay the puff pastry flat on the pan, pour the veggie/egg mixture onto the pastry and fold the edges over, trapping the mixture inside.

6. Bake for about 10/15 minutes. I didn't care much about how it looked, so I randomly poked parts open to see if the egg had cooked. It took around 15 minutes for me.The finished Omelet pastry A Piece
