Spicy Garlic 'n Chive Mashed Cauliflower

The older I get, the less I like potatoes. I needed a side dish for dinner tonight and decided to use the head of cauliflower in the fridge. I couldn't find the blog post I saw recently with a recipe so I just winged it and put in what I like.

1 head cauliflower, chopped into florets
3 cloves garlic, peeled
2 wedges Laughing Cow Light Cheese--Swiss
1/4 cup half and half
1/4 skim milk
1/4 cup sharp cheddar cheese, shredded
1/4 parmesan cheese, shredded
3 T butter
1/2 teaspoon ground black pepper
2 Tablespoons dried chives
1/2 teaspoon red pepper flakes, or to taste
1. Place the cauliflower and garlic cloves in a microwave safe dish with two inches of water and cover with lid or plastic wrap. Cook 7-9 minutes, or until garlic and cauliflower is very tender to knife.
Steamy!

2. Move cauliflower to food processor and process down until fine. Add milk, half and half, butter, cheeses, and seasoning.

3. Taste and adjust seasoning. I didn't add salt because of all the cheese and felt it didn't need it (and I LOVE salt!) but you may need to.

4. Process until texture you like.

*I assumed the giant head of cauliflower would yield quite a bit more, so was more heavy handed with the higher calorie (albeit delicious) ingredients since the cauliflower would have balanced them out if it had yielded 6 servings. Next time I would probably omit the half and half, and use half the cheese and butter. But I'm going to enjoy this batch
