Spicy Garlic 'n Chive Mashed Cauliflower



The older I get, the less I like potatoes. I needed a side dish for dinner tonight and decided to use the head of cauliflower in the fridge. I couldn't find the blog post I saw recently with a recipe so I just winged it and put in what I like.



1 head cauliflower, chopped into florets
3 cloves garlic, peeled

2 wedges Laughing Cow Light Cheese--Swiss
1/4 cup half and half
1/4 skim milk
1/4 cup sharp cheddar cheese, shredded
1/4 parmesan cheese, shredded
3 T butter
1/2 teaspoon ground black pepper
2 Tablespoons dried chives
1/2 teaspoon red pepper flakes, or to taste


1. Place the cauliflower and garlic cloves in a microwave safe dish with two inches of water and cover with lid or plastic wrap. Cook 7-9 minutes, or until garlic and cauliflower is very tender to knife.

Steamy!


2. Move cauliflower to food processor and process down until fine. Add milk, half and half, butter, cheeses, and seasoning.



3. Taste and adjust seasoning. I didn't add salt because of all the cheese and felt it didn't need it (and I LOVE salt!) but you may need to.



4. Process until texture you like.



*Nutrition Information, based on 4 cup yield from this batch, and 1 cup servings

223 cals, 15 g carbs, 10 g protein, 15 g fat


*I assumed the giant head of cauliflower would yield quite a bit more, so was more heavy handed with the higher calorie (albeit delicious) ingredients since the cauliflower would have balanced them out if it had yielded 6 servings. Next time I would probably omit the half and half, and use half the cheese and butter. But I'm going to enjoy this batch Wink

This looks soooo yummy, Mare! I've made plain old mashed cauliflower before but I really like the additions you made. Definitely going to try this.

I totally thought that was ice cream!  but mashed cauliflower still sounds good. Wink  sounds like a tasty side dish!

haha, that's what I thought when I posted the pic Cheesy But I discovered today that my favorite ice cream scoop holds 1/3 of a cup, so that's good to know! This was a huge hit for dinner, my mom raved about it! Served with chicken sausage (apple and gouda flavor) and a pile of sauteed peppers and onions.

I love cauliflower and I thought this sounded like a great recipe for when I get all my wisdom teeth out next month and can't chew. So I tried it. Fair warning to others: You probably don't want to do this unless you have a food processor/blender to get it to a super-fine consistency. Stringy bits of cauliflower aren't that great... ( I used a fork  Roll Eyes )
