So I've been making tonnes of avocado babyfood for my 11 month old which has me thinking about what else I can make with avocados.  I eat lots of avocado sushi when out but have no experience cooking with them.

So tell me what are your favourite avocado dishes?

My little girl's first food was avocado banana puree Smiley She loved 'em!

In terms of recipes...hmmmm...I've done just about everything with avocado...including muffins! But my favourite thing to do with them will always be salads and guacamole...and yes, of course sushi!! Yummy. I could eat avocado all day. My favourite salad with avocado has baby greens, julienned carrots and beets, craisins, almond slivers, cucumber, grape tomatoes and feta (I'm vegetarian, not vegan) with avocado oil as the dressing. Super yummy and satisfying!

The only way I have found is to eat it right away...but perhaps brushing it with some lemon if that's not possible?

Guacamole! I love it so much that I will eat it straight out of the bowl given the opportunity, especially with some chunks of ripe tomato mixed in Smiley

If I have the time, and ingredients, I usually make a black bean/rice/avocado slice wrap. But most of the time I don't, so I'll either make guacamole to eat with pita chips, or add avocado slices to a small bowl of sliced cucumber.

By the way, squirting some lemon juice on cut avocado will definitely help keep it from browning. Smiley

A friend of mine made a raw, gluten-free, vegan, avocado chocolate pie. Though I don't follow any of those diets I can safely say that this pie was super good.
