So I've been making tonnes of avocado babyfood for my 11 month old which has me thinking about what else I can make with avocados.  I eat lots of avocado sushi when out but have no experience cooking with them.

So tell me what are your favourite avocado dishes?

My little girl's first food was avocado banana puree Smiley She loved 'em!

In terms of recipes...hmmmm...I've done just about everything with avocado...including muffins! But my favourite thing to do with them will always be salads and guacamole...and yes, of course sushi!! Yummy. I could eat avocado all day. My favourite salad with avocado has baby greens, julienned carrots and beets, craisins, almond slivers, cucumber, grape tomatoes and feta (I'm vegetarian, not vegan) with avocado oil as the dressing. Super yummy and satisfying!

Thanks FoxyBlue.  How do you keep the avocado from browning in the salad?

The only way I have found is to eat it right away...but perhaps brushing it with some lemon if that's not possible?

Thanks, that's always been why I hesitate to use it.

Guacamole! I love it so much that I will eat it straight out of the bowl given the opportunity, especially with some chunks of ripe tomato mixed in Smiley

If I have the time, and ingredients, I usually make a black bean/rice/avocado slice wrap. But most of the time I don't, so I'll either make guacamole to eat with pita chips, or add avocado slices to a small bowl of sliced cucumber.

By the way, squirting some lemon juice on cut avocado will definitely help keep it from browning. Smiley

A friend of mine made a raw, gluten-free, vegan, avocado chocolate pie. Though I don't follow any of those diets I can safely say that this pie was super good.

I've been putting avocado on everything since I started living in California. Favorites:

This Quinoa recipe + cubes of avocado. The lime juice keeps them green. http://www.epicurious.com/recipes/food/views/Black-Bean-and-Tomato-Quinoa-238939

A caprese panini with avocado slices added after grilling. Not vegan, obviously.

We live in an avocado farming area, so I've had lots of opportunities to experiment.  I like avocado on toast with salt & pepper.  You can mix it with goat's cheese, seasoning and lemon juice to make a delicious dip or sandwich spread.  A really yummy pasta dish  - chopped avocado, garlic, lemon pepper, shaved parmesan and some good olive oil.  Avocado is lovely with chicken on wholemeal (wholewheat) bread.

This website has lots of avocado recipes (it's Australian, so measurements are metric): http://www.avocado.org.au/recipes/recipe_finder.aspx

My favourite easy recipe with avocado (not vegan) is an egg baked in an avocado:

Cut avocado in half, remove pit and dig a slightly bigger hole; place in a small baking dish (just so it doesn't tip over). Break an egg in the hole, top with some grated cheese and bake at 475 about 13 minutes (cooking time may vary slightly depending on your oven and on how cooked you like your yolk). Voil, grab a fork or spoon and dig in!

Avocado Brownies - one of my favorite avocado recipe. I found the recipe of Avocado chocolate Brownies on internet and tried at home and omg I don't believe it turned so delicious. My kid just loved it. I am not a chef, but rather you can call me a foodie who loves to explore home cooking in weekends.
