I'm knitting this shawl

But I don't understand the last two charts, why are there greyed out areas? How do I knit these?

If I'm understanding it right, the grey is just a placeholder, implying that there is more "stuff" off to the right, because you are instructed to do each chart multiple times.

Yep, those aren't sts in the gray, they're just there to keep the chart squared up. Just work the other boxes and as you increase the sts will be there on the following rows.
