I made some colourful pancakes/latkes using root vegetables. They are so colourful and full of flavour. : ) I have a vegan sour cream recipe in the same post so you can enjoy some non-dairy sour cream with these.

Ingredients

* 1 Flax Egg * (instructions in post)
* 1/4 cup Whole Wheat Flour
* 1 Green Onion, minced
* 4-6 cups Carrots, Beets, Parsnips, Sweet Potato, Potato, peeled and shredded
* 1 tbs chopped fresh dill
* 1/2 tsp Garlic Powder (or minced fresh garlic)
* 1 tbs Fresh Lemon Juice
* Sea Salt, to taste
* Ground Pepper, to taste
* Extra Virgin Olive Oil (for frying)
* Apple Sauce and Vegan Sour Cream, for serving

If these are as tasty as they are colorful, then they must be delicious. Excellent trying a new spin on an old favorite. Smiley

Thank you! Shocked) They are both sweet and savoury and even spicy if you add some cayenne. Definitely a lovely meal!
