Yep that's me!

Okay, i bought quinoa last night. I tried it once a couple years ago, but i didn't know what to do with it... and did not care for it. So, who has some really good and pretty simple recipes i should try?

I cook my quinoa in my rice cooker with some garlic.  Then I add steamed veggies and grilled chicken to it.  I can make it Sunday and have a whole week of lunches!

Sounds like everyone's doing a good job on this week's goals!

I didn't get as many veggies in yesterday as I would have liked, I let my arthritis pain let me eat more comfort food-y. But today I'm doing a big salad for dinner!

Well, I did pretty good today. Probably cause I wasn't near the kitchen too much. Had scrambled eggs and sherry tomatoes for dinner. Spoiled myself. I forget to eat eggs. Everyone's' getting in so many vegetables. Wow.

OK, admittedly not the healthiest tea this evening, Wednesday is my major medication day (16 in total, 12 in the evening) and me and pills don't get on very well (I get kind of a psychosomatic nausea every night at pill time which makes it really tricky to take them!) so I like to have really nice food as a treat to look forward to on my worst day!!

So this evenings food was roast beef, yorkshire puddings (made them low fat and lactose free), a few roast tatties and roast red onion, cabbage and gravy  Roll Eyes  All I can say is it's a good job I had eaten healthy the rest of the day Wink

Last night I had the sweet & spicy chicken skewers for dinner.  They had chicken, pineapple, onion, squash and zucchinni on the skewers.  The glaze was mix of 3 Tbsp ketchup, 1 Tbsp maple syrup, 1/2 Tbsp soy sauce, 1 Tbsp cider vinegar, and and 1 tsp (or more to suit your tastes) sriracha.  Just brush the glaze on before grilling then again right before you take them off (a separate batch so it's not contaminated by chicken juice)  I left the sriracha off the ones I made for my kids cause it really makes them spicy.

I'm in! I need to eat healthier!
Last year I cut out sodas; expect for when I was at a party or something, than I'd drink one or choose juice (for the vitamins but it does contain lots of sugar too :s)
I just bought a rice cooker so hopefully I can come up with some tasty healty meals!
The tips through this thread are great! Going to write them all up Cheesy

Today I made mashed garlic cauliflower. Always thought that was the desperate low-carbers way to cheat and remind themselves of the joy of spuds but I like it on it's own merits. I made it with a potato masher after defrosting a bag of garlic califlower florets. Yummy.
What was I afraid of?
