Hiya! Searched through the forums and all I could find was the traditional nut loaf or people who just eat sides, but hey ho. What are some delicious vegan christmas mains? What are you having for your christmas dinner?

I planning to make a bit heavy dinner this christmas. The menu includes:
1. Layered squash, barley & spinach pie.
2. Truffled parsnip & Parmesan bruschetta.
3. Fig & blue cheese tart.
4. Squash & nigella seed soup and
5. A fruit filled cake.

Hello, hope you all had a great Christmas dinner.  This is what I made...



To start a winter slaw, based on this recipe.  Caramelised macadamia nuts, cabbage, chili, coriander & mango.  I used a slightly easier dressing than the recipe calls for, just a mix of soy sauce, sweet chili sauce, sesame oil & freshly squeezed lime.





For main, tofu & Brussels sprouts stir fry, again recipe here.  I used peppers instead of mushrooms (I don't like mushrooms  Angry).

Both delicious were delicious, and I will certainly be making the slaw again. And both dishes are vegan.
