I know that cottage cheese and rolls are not something that most people think sound good together, but honestly, my family waits for these as I only make them at Thanksgiving and Christmas!  The cottage cheese serves to make the rolls moist and also holey. Cheesy

In a small bowl:
Mix 2 packets of yeast with 1/2 cup warm water

In a medium saucepan on low heat:
2 cups cottage cheese
1/4 cup sugar
Let just heat through, then remove from heat.

In a large bowl:
mix cottage cheese/sugar mix with
2 tsp. salt
1/2 tsp baking soda
2 eggs
1 cup flour
Mix well

Add yeast/water mixture to large bowl mixture.  Mix and add in 1 cup flour.

let rise until doubled.  Once doubled, flour your counter or whatnot and form the dough into balls.  At this point, you may decide you need to add more flour - feel free!  The dough should be sticky, yet form into decent doughballs. 

Spray your cakepan with cooking spray and put the dough balls into it.  Let rise until doubled. 

Bake at 350 degrees for about 20 minutes.
