Here's a yummy breakfast or anytime meal full of veggies and protein! And corn tortillas are so yummy, and imo so much better than flour tortillas in both taste and nutrition!




1 cup diced/chopped veggies--I used a little red onion, red pepper, zuchini and broccoli. Mushrooms would of course be great!
1 Morningstar Farms Veggie Sausage patty--defrosted and diced
2 eggs, scrambled with fork in small bowl
1 ounce shredded cheese
Corn tortillas
Seasoning of choice--I like Montreal Steak Seasoning and red pepper flakes

In a very small fry pan, saute your veggies and veggie sausage until cooked to your preference. I like the onion to be soft and the rest to still have a bit of crunch.



Meanwhile, heat the corn tortillas until slightly browned, I prefer to use my flat griddle to do so.  



 Push the veggies to the sides of the pan and pour your eggs into the center.  



Season and begin to scramble with a spatula, moving the veggies and the eggs together. When eggs are set to your liking, sprinkle with cheese and take off the heat.



Serve with tortillas and hot sauce.



Nutrition info, using cheddar cheese. 3 small guerrero corn tortillas and 1 teaspoon vegetable oil in the pan:
501 calories, 4 g sugar, 29 g carbs, 6 g fiber, 33 g protein, 29 g fat

To cut down on the fat and cals I'll probably be making this in the future without any oil, mozzarella cheese instead of cheddar, and subbing egg whites for whole eggs.
