Hey everyone! I haven't been to the cooking boards for a while. Thought I'd share one of my recent recipes. I first found out about Congee 4 years ago and I have loved making it ever since. I've made it about 6 times and this time it was soo much better than any I have made before.

In case you are unsure as to what congee (also called Jook) is, it's basically an asian rice porridge. You keep adding more and more water to the rice until it breaks down and makes a thick and hearty porridge-type consistency. I add tons of vegetables and veggie stock to it. Yum. I think it tastes much better than it looks or sounds. It's amazing as a comfort food and great for the winter months or when you're under the weather.





Ingredients

* 1 cup long grain rice (I used Jasmine rice)
* 9-12 cups of water or low sodium vegetable stock (I recommend using stock instead of just water)
* 8 broccoli florets, chopped into small pieces
* 2 carrots, chopped into small pieces
* 1/4 of red onion, finely chopped
* 1 zucchini, peeled and chopped
* 6-8 mushrooms, chopped
* 1 cup cabbage, chopped
* 3 garlic cloves, minced
* 1 tbsp Ginger, minced (or powdered dried ginger)
* 1 green onion, finely chopped
* Ground Black Pepper & Cayenne Pepper, to taste (I like mine a bit spicy)
* Optional: 1/4 cup Nutritional Yeast
* Optional: Salt-Free Thai Seasoning Blend, to taste
* Low Sodium Soy Sauce/Tamari/Nama Shoyu for adding a bit on top of the congee when serving

Yum! I've never tried it vegetarian but that sounds delicious. I do like using the traditional toppings of green onions, fried onions, and chili sauce!

mm yes I did add green onion into the actual mixture, but adding some on top with some onions and chili sauce sounds awesome! : )

I have never heard of this dish. Thanks for the recipe. I keep failing miserably to make winter food that I can put away in the freezer for future meals.Tongue But I really want to try this so hopefully this will be my first success.Smiley

Oh yum yum yum. I would make some right now if I wasn't already full. When I'm full I have no inclination to even think about cooking even though I know I will need to eat again tonight.

I love this with corn and green/spring onions. Simple and yummy. I used to buy it in one of those little plastic cups with a thick straw when I lived in China. 'Zang' in Mandarin. So satisfying when it's snowing around you. Thanks for the inspiration to get a pot of porridge going. Mmmmmm

I'm exactly the same way when I'm full. I try to be inbetween hunger/satiated when I'm going grocery shopping. I'll buy "naughty" food if I'm too hungry, but I won't feel like buying anything if I'm not hungry at all.

Doh'...I forgot to put corn into the congee ;P And it just started snowing in Nova Scotia, so I'm definitely going to be making this again.
