Sometimes twisting the wire into a "wire rope" adds to the stability.  I don't work with it much so Huh

 You might want to try a flexible plastic armature from the doll craft section of Hobby Lobby.

They both look amazing! You have got all the details correct!

Like sewbead already said, there are many different types of craft wire in the shops. When I work with amigurumi I usually put there quite strong wire inside - I want the doll to be posable but I am always worried that the wire will break if I put something smaller. I got it from my father so I'm guessing it's something that you could get from a hardware store.
But yeah, there is suitable wire in almost every craft store also. But at least in here (Finland) the craft stores take much more money out of everything than the other shops.
