Oh sugar...how I love thee...

Made these for a friends birthday party, everything had to be pie themed.
Pretty happy with how these came out!
The vegan meringue mix is by "Angel Foods" it's a packet mix and it tastes like the real thing, amazing! Then there's a layer of soy-a-too cream, the lemon jelly bit is a packet mix (!? such a good find, in the cooking section) and the base is crushed up "nice" biccies with marg.

oh yummy!  I've been looking for an alternative to the way-too-eggy-for-my-taste meringue.  I do eat eggs on occasion, (lacto-ova vegetarian here) but I cant' handle them if they taste like egg.  hehehe.

what brand of Nice did you use? I love companies who cheap out and don't use dairy in their foodslol (not vegan, lactose intollerant)
