Hey y'all! I got this recipe from The Pioneer Woman http://thepioneerwoman.com/cooking/2011/09/frito-chili-pie/ but tweaked it a bit to my liking!
I don't have celiac's disease but I've had "digestion issues" since I was in high school (seriously, I could clear a room). A couple months ago I asked my doctor for some suggestions about why this was happening and what I could do to stop it. She suggested cutting out gluten first and if that didn't work we would move on to dairy. This horrified me. I love bread. I used to eat it with almost every meal! My "last meal" has always been a pineapple and bacon pizza and a dozen chocolate chip cookies. I was almost hoping for lactose intolerance when I began my little experiment. But after only three days it was clear, gluten= gas for my body. So, from then on I've been trying(sometimes failing miserably) to keep myself gluten free. I'm always on the lookout for meals that are already gluten free, and when I saw this one the other day I immediately double checked all the ingredients and said yes and thank you!

So here's what you need:

1-2 pounds of ground beef
1 can tomato sauce
a teeny tiny bit of salt
1 tsp Allspice
1 Tblsp Cumin
1/2 Tblsp Chili Powder (more if you like your chili spicy)
1/2 Tblsp Onion Powder
1/2 Tblsp Granulated Garlic
1 can black beans
1/4 cup of Masa
1 cup water
Frito's
Cheddar Cheese





Ok so I just wanted to comment on my ingredients. If I had gone to the store this weekend I would have picked up an onion and garlic and chopped those up and sauteed them until soft and sweet instead of using onion powder and granulated garlic. The beans I used had some jalepeno and tomato in them.

Ok Then! Brown that meat!



Add tomato sauce and seasonings!





Stir and cover it up and let it simmer on low for about 30 minutes



Add the beans



cover it up and let it simmer for about 20 minutes



Mix the corn flour and 1/2 cup of water



Put it in the Chili and add in the rest of the water



Now let it simmer for another 10 minutes or so and assemble your other utensils



Now layer!







Eat it up yo!!!!!!

Not only does this sound amazingly delicious, your pictures are gorgeous!!
