I've been thinking about making this one for a while!

So basically $4.50 worth of red onions from Aldi and a little apple cider vinegar produced 4 pints of pink and savory loveliness Smiley





In process (note how red the literally smoking hot burner is):


The thing I loved about this recipe is that it was really really easy to pack the jars.  Because you par-boil the onions, they slide right in and you just have to top them off with brine.  You could basically put whatever spices you want in the brine, this mix is a little like a bread and butter pickle with more spice. 

What I didn't like about this recipe was the smell in my kitchen and on my hair and skin Sad  I smelled like a raw onion for like 3 days  Shocked   But they were heaven on earth on cream cheese and a cracker, so I guess it's worth it Smiley  Thanks for looking!

Sounds really good.  I think I'll try this after I finish my pickled turnips, beets and carrots.  Or I could just buy more jar lids.  Tongue

Yeah we do!  I got those lovely little red onions for $.70 a pound!!!  They actually carry a ton of international stuff too, which is great Smiley
