I adore popcorn (air-popped, non of that microwavable junk. Though I'm a sucker for movie theater popcorn), but its nice to change things up a bit from the usual melted butter, occasionally with a little sprinkle of salt.

Any ideas to shake things up? Preferably nothing prebought, like those flavoured popcorn powders. Things I have in the kitchen.

I just tried a little sprinkle of sugar and it gives it that kettle cooked flavor, which is tasty as well.

Two words: Spice Cabinet.

It's not the pre-bought flavoring junk, it's actual flavors. My favorite is spicy honey curry popcorn.


Failing that, eat popcorn with a blindfold because you'll taste it differently.

Have you ever tried making popcorn on the stove in a kettle?  It's a little less healthy since you have to use a little oil but it's still better than the microwave stuff (IMO.)  In a 4qt kettle or sauce pan, heat about 1 tablespoon canola or vegetable oil along with 3 kernels of unpopped popcorn.  Keep the lid on and as soon as you hear the 3 kernels pop, pour in 1/2 cup unpopped popcorn.  Keep the lid on tight and shake the kettle occasionally to help all the kernels pop.  Remove from heat once the popping stops, keep the lid on for an extra minute or so in case any stray kernels pop.

As a variation of the kettle popped popcorn, you can make...kettle corn!  Start the same as above, by heating the oil in your kettle with 3 kernels of popcorn.  When they pop, pour in 1 tablespoon white sugar, 1 teaspoon salt, and 1/2 unpopped popcorn.  Clamp the lid on and keep that kettle moving constantly!  It's best to alternate on and off the heat, too.  Usually about 5 seconds on to 3 seconds off, and keep shaking and swirling the pan so the sugar doesn't burn.  It probably will still burn a little, at least the first few times until you get the timing down, but most of it should still taste good.

I've tried that once at a friend's place and MMMMMM it was delicious. If I'm in the mood for popcorn but don't have that "I need it NAOW" feeling, I'll definitely give it a shot.

I like to infuse the butter with flavor before adding it to the corn. Like granulated garlic, rosemary, and red pepper flakes. 
Another favorite is soy sauce or Bragg's Liquid aminos  Just need to be careful to sprinkle evenly so none of the popcorn is soppy.
This one only works with popcorn popped in oil or the powders don't stick, but nutritional yeast and cheddar cheese powder( check local health food store) make a great combo.
For super easy flavor try smoked salt, or truffle salt.

If you like something with a little bit of spice, you could try Old Bay seasoning. Its good on everything. I know its store-bought, but there are several recipes on the internet with suggestions on how to make your own. Like this one from about.com

Ingredients:
    1 tablespoon ground dried bay leaves
    2 teaspoons celery salt
    1-1/2 teaspoons dry mustard
    1-1/2 teaspoons ground black pepper
    1 teaspoon sweet or smoked paprika
    1 teaspoon ground celery seeds
    1/2 teaspoon ground white pepper
    1/2 teaspoon ground nutmeg
    1/2 teaspoon ground ginger
    1/4 teaspoon crushed red pepper flakes

Or some sort of cinnamon sugar sort of thing with just a tad of butter to make it stick would probably be tasty if you like things sweet.
Or a little drizzle of some sweet caramel.

Take 3 tablespoons of chili pepper and sprinkle some mozzarella cheese. Or if you want something sweet add a cup of brown sugar and a tablespoon of cinnamon. Make sure you mix both of them well. Let me know if you try either of them.
