I used white chocolate for instead of the 'white candy coating' (can you even get that in Australia?)
We can, but its so expensive that when you taste it you will cry in disgust and morn the loss of your $12.95.
Wilton make candy coating, other company's call them candy wafers. Essentially it is white cooking chocolate that has so much palm oil and flavorings that it can no longer be legally called white chocolate (in the US).
Palm oil is what Cadbury tired adding to its chocolate when everyone revolted against it back in 07 or 08. Palm oil is also one of the worse trans fats consumed by humans.
I make my own candy wafers. To follow this recipe you will need to use Coles Brand white chocolate buttons, because it already has a % of palm oil in it and I've adjusted my recipe to just the right amount Copha. If you use a different cooking chocolate you will need to play with the ratio for Chocolate to Copha, what your looking for is a mix that when hardened doesn't feel like solid fat but feels like a chocolate piece.
100g Coles Brand White Chocolate Buttons
Flavor with real vanilla essence or seeds, or any oil based flavors that take your fancy (imitation or water based flavors will seize your chocolate)
Colour with Candy Colour or powdered colours (water based or gel based colours will seize your chocolate)
This recipe will give you a more chocolately coating then a candy wafer coating because it has a lower % of Palm oils (and Coconut oil from the Copha) but it works the same and gives the same snap to your coating as a candy wafer
