Vegan pumpkin bread :)

Hello all! Lately I've been wanting to experiment with making Vegan treats along with my learning how to cook. The other night, I made Brunswick stew (I'm sorry it's not vegan or vegetarian ) and while it was simmering, I baked Vegan pumpkin bread AND a vanilla thing...



Unfortunately both loaves got a bit burned on the tops and bottoms. I never had this problem with my parents oven, but the oven at my house I'm living at now is so old that it tweaks out and sometimes randomly decides to cook things higher than it's set to and kills them a bit. The insides were moist and delicious though, so we just trim off the burnt parts. Next time I'll keep an extra close eye on this so that the oven doesn't kill it again.

However, I didn't add flaked coconut or chopped walnuts. I don't like coconut that well but was fine with adding coconut milk... However, the walnuts couldn't go in, walnuts are yucky. (Lame, I know, I've just never been a fan of nuts of any kind. )
