Topic: My alternative to eggs!! A delicious chickpea scrambled omelet  (Read 10160 times)

I'm allergic to eggs, dairy & soy... so I have to find alternatives for everything.

This is so simple to make and is absolutely delicious!!

You will need:
Chickpea/basan flour (I usually get mine at my local bulk food store)
Water
Salt & pepper to taste

This is what I like in mine, but you can add pretty much anything to it!! Make sure your veggies are finely chopped!
Spinach
red/purple onion
red peppers

Mix chickpea flour & water until slightly runnier than a standard pancake batter (I usually use about 1 C flour to 1 1/2 -2 cups water)
add chopped veggies and salt & pepper to taste, you can also mix in your favorite spices.

Use 1-2 tsp oil in your pan- pour in omelet mixture (very thin if you want an actual omelet or thicker if you want a scrambled omelet)
cook approx. 5- 10 minutes on med heat & Enjoy!!

No problem!  Glad I can help... it's so simple yet so delicious & it totally fills my craving for eggs!!  The first time I made it my husband asked me if I was crazy... he thought I was actually eating eggs!! LOL

You can use this as a none vegan/vegetarian recipe also by adding meat & cheese.
I've made it for my husband with cheese a few times & he says it's delicious!!

This looks so delicious! I can eat eggs but the smell of scrambled eggs makes me nausious so I never go for stuff like this but man this looks like something I could definately chow down on, I've been on such a breakfast kick lately too. I'm definatley going to be stopping by the healthfood store to look for that chickpea flour when I go into town. Thanks for sharing!

it doesnt taste after eggs though, does it? it looks so delicious and worth to try!! you know, i cant stand eggs, its the smell and the taste... uahh

No it certainly doesn't taste like eggs, but it has a similar texture to eggs. I'm certain if you like chick peas you will like this!!!

im sure with a little work you could get something close..I was able to do it with tofu but if you didnt want it to taste like eggs it wouldn't really be a problem. Getting something to taste like something else spot on is pretty tough with agriculture products

@Goomba: haha, im happy that agriculture products doesnt taste like meat or eggs, it would be a huge problem for me!
