Hello all Cheesy

So, I decided I want to learn how to cook so that I can stop eating out so much and have other alternatives to boxed mac'n'cheese (Although now I have that yummy organic kind that has more options and uses real cheese instead of Kraft and it's delicious!!!), boxed Tuna Helper, boxed this, boxed that, canned this, canned that... ^^;;; Well... It's a well known fact I cannot cook... Haha... I set a small fire in my parents kitchen making top ramen..... That takes skill. LOL. Anyways, lately I'd been craving biscuits and gravy... But I don't wanna take the light rail to the last stop out here so that I can go to a restaurant for it, that's kind of expensive on my tiny little budget, lol, and I have a friend who makes amazing biscuits n gravy, but for a lot of reasons, I haven't spent much time with him lately, so it'd be really rude to go to his place for biscuits and gravy ^^;;; So what's a girl to do?

However.... I called my mom to ask how to make it and she said to me "Alison, you can't make biscuits and gravy..." I asked why not and she said "You can't even make white sauce... That has THREE ingredients... If you can't make a basic white sauce, there's no way you can make gravy, especially not sausage gravy".... Well... I'm stubborn... XD My mother's statement kept me from making biscuits and gravy just long enough for me to get some delicious pork sausage with sage from New Seasons. Cheesy



Sorry the picture isn't amazing, but it was like 9pm... I was tired, hungry, and fussy. LOL This was my 1st time ever making biscuits and gravy, and I made it entirely from scratch. Smiley I made four biscuits, and enough gravy to cover it to how I wanted. However, the recipe I used calls for I think it was half a pound of sausage, but I only bought 1/4 lb because I don't want to eat half a pound of sausage, four biscuits, and all that gravy... I'd pop O_O I'm 5'0, about 95-97lbs... I can eat a lot, but this was even a challenge. It was really filling, but it tasted great. Cheesy

It is now a long running joke with my mother that maybe some day I'll be able to make that damn white sauce lol, because I still can't make it... I tried the other day and it turned into soup again LOL. So my plans for having S.O.S with ground turkey and olives ended up being a tuna melt with imported cheese, olives, and chunk light tuna XD.

Oh, and my mother was incredibly shocked and proud that I managed to make this lol. I'm starting to improve on cooking and baking, so I'm pleased.

What are biscuits?, from the recipe they sound a bit like scones, are they bready or crunchy? I'm intrigued. x

Biscuits are usually very soft and sometimes flakey. These were a bit less so but still really soft. THe reason they weren't as soft though was because my oven is so old and weird that sometimes it tries to kill anything inside it.

1) Ali's oven is like miiiine!
2) I TOLD YOU THAT YOU COULD DO IT!!!
3) Add more of the thickening ingredient to your white sauce if it's soupy.  If you don't know what it is, add liiiittle bits of flour or corn starch.  (Get a little cup of your sauce, add the flour/corn starch and wisk it to DEATH, then add it all back to your sauce and wisk it to death again and it shouldn't be lumpy.)  Also, if you're making a sauce with milk, try using evaporated or condensed milk instead.  It's a little thicker than normal milk 'cause there's less water in it.  You can also use cream.  Depending on the sauce, yogurt or sour cream can replace the diary too. =3  Since you're adding less water, it will be a bit thicker.  Also, is it possible that you just didn't cook your sauce long enough?  Boil it longer to get rid of excess water.  If you let it stand and it's still too watery, just boil it for a few more minutes, remove from heat again and let it stand. =3
