I'm a night person. Some of my best recipes come to me late night after work...last night/ this morning(4am) was one of those nights. While sitting at my computer I had this random idea of "breakfast pizza". A dish bringing my two favorite things together, breakfast food and cheesy dough baked in a rocket hot oven.
I did some research to see if others have had this wonderful idea to find only a few, most I did not agree with the techniques used, texture combinations, or the science (lack of it) in the dish.
So here is my semi final product after my thinking, research and what I call "lab time".



Consists of:
1 thin crust pizza dough
olive oil
2 and a half 1/2 rounds of hot breakfast sausage
half of a small onion, thinly sliced
3 eggs, scrambled
a large handful of fresh shredded cheddar jack cheese
missing: Green pepper, chopped, and a little tomato chopped (both of which I thought I had but apparently not)

Hope it has motivated you to mix more of your own favorite dishes into one.

we used to make breakfast pizza all the time when I was a kid!

My dad insisted that breakfast pizza was a scrambled egg crust with toppings & cheese, but when my sister & I decided that WE were making it, we used a crust Smiley
We definitely had a lot more toppings, though lol

It's freaking AWESOME!

You really could go nuts with toppings on this but when using a thin crust I try not to go to far or else you run into problems getting it off the peel into the oven and just run into all sorts of issues.
and it truly was greater then I expected it to be..the next one shall be even better. Wink

Oh man- that looks Delicious... alas no breakfast pizza for me... I'm Lactose intolerant & allergic to eggs Sad (2 of my favorite foods used to be eggs and cheese...LOL)
But It looks soo good... I may just have to try this for my very picky 3 year old!! She loves pizza and eggs so this will be right up her alley!!!

Thanks for the suggestions... unfortunately though I am also allergic to soy- so No tofu for me Sad  I hear there are some good lactose & soy free cheeses on the market but I have yet to find any in my area. & I have already found a great & delicious alternative to eggs - chick pea flour is great and it cooks up just like eggs (scrambled, fried, omelet etc.)

Ooh, how interesting! I have some chickpea flour, will have to experiment with it some more! I'm lucky enough to live really close to Bob's Red Mill, they have the best stuff!

LOL... No worries. It's something I'm used to now & I live with it! I've found great alternative for more things I'm allergic to, there's just a few that are apparently hard to find in my area!

I posted a thread about my chickpea scrambled omelet, I figured I mentioned it I should post about it! (I even had a photo I took from the first time I tried it)

Two-my dad started making them after he discovered a pizza shop selling them near his job (he works third shift so he's coming home at 7 am). He uses a tortilla shell for crust which is super thin and crispy. Soo good.

a tortilla shell would be pretty great for this sort of thing. I love using them for quick pizzas at like 3am when I'm gaming.

Great idea - I have been grilling homemade pizzas for an easy lunch for DH and a buddy who has been helping with our renos all summer.  This looks yummy, and like something fun to do for a weekend brunch.

the cafeteria at my job has been making something like this on certain days lately and I LOVE IT!  I have been wanting to recreate it at home and I think you may have just done it for me!  Thanks so much for sharing!!!
