cake
-1 1/2 cups unbleached white flour
-1/3 cup unsweetened cocoa powder
-1 teaspoon baking soda
-1/2 teaspoon salt
-1 cup sugar
-1/2 cup vegetable oil
-1 cup cold water
-2 teaspoons pure vanilla extract
-2 tablespoons vinegar

directions
to make cake, preheat over to 375.
sift together the flour, cocoa, baking soda, salt, and sugar into and ungreased 8-inch square or a nine inch round backing pan. in a two cup measuring cup, measure and mix together the oil, water, and vanilla. pour the liquid ingredients into the baking pan and mix the batter with a fork or a small whisk. when the batter is smooth, as the vinegar and stir quickly. there will be pale swirls in the batter where the baking soda and the vinegar are reacting. stir just until the vinegar is evenly distributed throughout the batter. back for 25 minutes to 30 minutes. set the cake aside to cool.

did i mention this cake only takes six minutes? i copied it out of the moosewood resteraunt "cooks at home" cookbook. and since my mom is gluten free(she has celiac.), she makes this cake a lot with a mixture of rice/tapioca/ and something else flour. it works nicely.
we call it wacky cake. enjoy.

I'm not vegan, altho I considered becoming one not too long ago (realizing that it is hard to do since I love deli meat and hard boiled eggs, and also I don't live alone yet), HOWEVER, I AM lactose intolerant and don't really like milk at all, so this sounds like a fabulous recipe for brownies! Yummy. Can't wait to try it...

I made this cake with some homemade fudge frosting (also vegan) tonight to share with some friends.

I make alot of cakes this way because I cant eat eggs.  They upset my tummy.  I make spice cake and koolaid cake this way.  Make a white cake and add a pack of unsweetened kool aid.  Any flavor.Be different make a grape cake.

Hey, just wanted to say thanks for this recipe!  It is unfreakinbelieable.  It was so tasty/yummy!!!  I'm about to make my second batch of them this week.  I'm going to try and add some cherries to it and see if I can make some black forest brownies.

hey yea we added cherries one time too and they were soooooo good. it can also be made to be vanilla instead of chocolate. glad you like them~

I have a question... I just made this today and I think I mightve made a mistake,.... You think it would taste different if I used Crisco's Canola/corn oil instead of vegetable oil? Cause it turned out okay, but it has a funky after taste-ish. Its the only thing I used that mightve been different. I dont bake or cook much, so Is it better with something labeled "Vegetable oil"? ... lol if I made a huge booboo, I',m gonna feel pretty dumb haha. But I'll try it again if it makes a difference. Luckily I had everything at the house to make it.

lol well after talking to my mom i found out the stuff i used was downright old. lol So I guess that's why. The stuff was orange in color! I feel like an idiot now but at least I went and bought vegetable oil with my boyfriend today and we'll try again when the first batch is gone!
