If you're like me you have a bunch of tomatoes coming in from your garden. Or you just love the fresh ones from the grocery. Try this yummy summer recipe to use your tomatoes.

Tomato Pie (serves 8 slices per pie shell)

2 (9 inch) unbaked pie shells
4 eggs, beaten
1/2 cup soy milk
8 ounce sliced mushrooms
2 teaspoon salt
1 teaspoon dried basil
1 teaspoon dried parsley
2 medium onions, sliced thin
1 cup cottage cheese
4-5 medium - large tomatoes:sliced, drained
1/4 cup shredded cheese
Paprika, Parmesan, garlic
Directions
1. Preheat oven to 375 degrees F
2. Pierce pie shells with fork tines and put in oven for 5 minutes.

3. Slice onions and mushrooms and place in frying pan with little olive oil, and cook till just tender. Drain any liquid.

4. Slice tomatoes thin and place in a berry bowl to let any excess liquid drain off.

4. In a medium bowl, whisk together eggs, milk, salt, basil, parsley, and cottage cheese. Spread tomatoes evenly across bottom of pastry shells. Put onion and mushroom mixture on top of tomatoes. Pour egg mixture over and sprinkle with Parmesan. Then top with shredded cheese, and sprinkle on Paprika.

5. Bake in preheated oven for 55 minutes, until set in center and nicely browned.

Approximate Amount Calories Per Serving: 324

Add a nice salad with other veggies, and you have dinner! Smiley
