Today I made some lovely fresh bread. I used this recipe, but switched the flour to be 50/50 wholemeal and white flour, and added some seeds whilst kneading.  I served this with three salads.  




Firstly a tricolore salad - tomatoes, mozzarella, basil, olive oil & black pepper.



A garden salad - cucumber, lettuce, spinach, carrot, celery & broccoli (I blanched the broccoli for a minute in boiling water so it was a little softer).



And finally a salad of butterbeans, red onion, red pepper & chopped spinach, with this I made a dressing of lemon juice, olive oil & chopped red chili.



Delicious & super summery.  Now I just need to resist eating the rest of the loaf - fresh bread is just sooo moreish! Cheesy

Thank you!  I'm attempting to eat more healthily, though not quite sure how a fresh loaf of bread and lots of mozzarella fit in there!  Wink
