I made these for a back to school luncheon for my fellow teachers and they all LOVED them!  Thanks for the easy, yet impressive, recipe!  And it was so cheap since strawberries are in season! Smiley

I made them again.  This time, though, I modified it a little.  My husband has been on a low carb diet for a couple years so I modified this to make it low carb for him (and perhaps this will also work for diabetics).  For some reason I imagined that the store would sell sugar-free no bake cheesecake mix.  Well, they don't, or at least the ones in my area don't.  So, of course, I followed the mantra DIYODS.  I took a package of cream cheese, softened it, mixed in about a teaspoon of vanilla extract and about a cup of splenda (taste it to make sure it's yummy to your tummy) and filled the strawberries with that instead.  I had to leave off the graham cracker crumbs because of carbs but if you really missed those, you could use pulverized almonds instead.  They were nom nom (my whole family enjoyed them, not just the dieter) and less guilty!  I also used a pastry bag instead of a spoon and that made filling them even easier
Although to balance that healthiness my brain had to think of a way to make the original recipe even more indulgent.  I think they would be really good drizzled with chocolate, although they are spectacular as they are right now.
