i took this recipe http://www.allfreecrafts.com/giftinajar/butterscotch-cookies-in-a-jar.shtml and added some white chips to add more of a butterbeer feel...this is what i sent in the DH2 swap -- the jar -- but here is the recipe i sent with it

Molly’s Magical Butterbeer Cookies

 
Ingredients:
1/2 cup butterscotch & vanilla chips
1/2 cup crispy rice cereal
1-1/2 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon baking powder
1/2 cup packed brown sugar
1/2 cup butterscotch & vanilla chips
1/2 cup rolled oats
1/2 cup white sugar
Directions:
Preheat oven to 350* F. In a large bowl, cream 1/2 cup butter or margarine. Add 1 egg and 3 to 4 tablespoons of water. Add entire jar of butterscotch cookie mix and stir until blended. Drop dough by spoonfuls onto an ungreased cookies sheet. Bake for 12 minutes in a 350* F oven. Remove from oven and cool.

My friends and I experimented with butterbeer recipes before our big Potterfest, but none of them worked for us; the butter ended up precipitating out of the beverage once it reached room temperature.  So my boyfriend and I gave up on having something like canon Butterbeer for Potterfest, and instead just resorted to having creaming soda and vanilla icecream.  It turned out surprisingly well — very foamy, sweet, and creamy.  You could probably also add some rum to up the alcohol level if you so wanted.  You might also be able to serve this warm, but I've never tried it.

Lots of butterbeer cookie recipes!!  Well, here's one more!

Butterbeer Cookies in a Jar:


Ingredients:

1 cup all purpose flour
1/2 cup brown sugar
1/2 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon powdered vanilla extract (or add 1 t. liquid vanilla extract with wet ingredients)
1 package powdered butterscotch pudding mix
1 cup any kind of nut (peacans in above pic)

Directions:

Layer flour, brown sugar, and sugar in a quart jar, packing down lightly after each addition.  Combine baking soda, baking powder, salt, powdered vanilla (if using) and butterscotch pudding mix in a small bowl.  Mix well and add to jar (packing slightly).  Fill remainder of jar with nuts.  Attach tag with instructions:

Pour jar contents into a large bowl; mix 1/2 cup oil and 1 egg (if not using powdered vanilla, add 1 t. vanilla here).  Form into one inch balls and arrange on ungreased baking sheet.  Bake at 350 for 10 minutes.  Enjoy!

These sound great Abbeeroad!  Random question for you too...  Was it you who sent a jar of pumpkin juice mix?  If so, any way I could get you to share that one too?  (I know, I'm a giant pain!)

I know I sent a jar of pumpkin juice mix... I don't remember if I was the only one or not though.
I do have a recipe, but it's written down on an index card and put into my recipe box... which is still in a box from the move. I'll find it and post the recipe as soon as I can though!

we had a potter-thon to catch up before the new film was released
we had chocolate frogs, chocolate poured into novelty ice cube tray and left to set, almost too cute to eat, almost
koughing krispies, marshmallow crispie cakes moulded into bite size balls
fever fudge, chocolate fudge = 400g medium dark chocolate, 25g butter, 397g tin of condensed milk, melted together then beat in 100g icing sugar and spread in a lined tin to set
and lastly, pumpkin spice biscuits as i couldn't get pumpkins to make anything actually pumpkin-ny, but i cut the biscuits into pumpkin shapes

ok, so I did a little digging, and here's where I found the Pumpkin Juice Mix recipe:

the "orange-flavored breakfast drink powder" is Tang, or the equivalent.
the "regular" instant tea mix is just plain, unsweetened instant tea mix. (to me, it looks like dead, dried ants, which makes more cool/disgusting, but all the more Harry Potter-ish!)
it mixes better with hot/warm liquid, and tastes good either hot or cold. (you can mix it with cool/cold liquid, but it won't dissolve everything, and some of it will sit on top or the bottom (much like tea leaves!) and the pumpkin pie spice hardly ever dissolves, unless you mix it with hot liquid.)
