Hello my lovely Craftsters...I haven't been on here for a few months. :| I was finishing off the last crazy semester of university and needed to focus on as I chose an insane Major Thesis... but all is well and I've graduated, so I thought I'd post a delicious raw cake I made recently. It is very light tasting and made of all natural and healthy ingredients. Yum yum. Me and my dad ate it all in three or four days Shocked
I went a little 12-year old kid crazy with the decorating, so please forgive me haha.. next time I'll try to be more elegant about it.

Cake Ingredients

* 1 cup of raw Almonds
* 1 cup of Pitted Dates
* 1 1/2 cups Fresh Blue Berries
* 1/2 tsp of both Nutmeg & Cinnamon
* 1/4 tsp Sea Salt

Cashew Icing Ingredients

* 3/4 cup Raw Cashews (soaked for 2-3 hrs)
* A little under 1/4 cup water
* 1 tbs Honey / Thick liquid sweetener (you can also try using some stevia, although I haven’t tried it with this yet)
* 1 tsp Fresh Lemon Juice
* 1 tsp Pure Vanilla Extract
* 1 1/2 tbsp Coconut Oil / Extra Virgin Olive Oil
* A tiny pinch of Sea Salt (I used Himalayan Pink Salt)

If you like the look of this and the ingredients, I have it all layed out and explained on my website Smiley
http://calmmindbusybody.com/raw-cake-cashew-icing/ I'm updating with new recipes regularly and take requests/recommendations on what I should add on there. I also try to "vegan/rawify" recipes that may not be as healthy as they could be. Anyhoozles, tangent.

This looks delicious.  Dates have never been one of my favorite foods, but these pictures make me think I should give them another try.

Yeah - Don't worry, it's not really a "datey" flavour, it just adds sweetness and the stickiness to hold things together. I don't think the taste of this will turn you off even if you aren't a huge date fan.
