It's been kinda hot lately, which makes me not want to turn on the oven, and some times I don't even want to attempt to cook dinner. Give me some suggestions of what to make for dinner. What are your summertime favorites? What things are good at avoiding the oven and/or are refreshing on a hot day?

We grill a lot during this time of year and when we do, we always do at least one "plan ahead" meal. For example, we did hot dogs for the 4th but we also grilled some chicken so it can go into either a caesar salad, wraps or pasta salad.

Also, think about using a slow cooker. They don't heat up the house the way the oven does. We usually do one dinner a week that way. It does take longer but it's worth it. Smiley

That being said, we do lots of salad variations (both green and pasta), wraps using large tortillas with lots of veggies, and platters of lunch meats with hummus, cheese, fruit and crackers.

I LOVE both hummus & pesto. Both are great in wraps or sandwiches with lots of veggies, both work will on pasta too. (thin hummus out with a little oil & a little water or broth)

Make a huge pot of pasta when it is cooler at night. Drain & rinse quickly. Drain well & a little oil so it doesn't dry out & stick together. Store in fridge in big zipper bag. Mix with pesto & chopped veggies. If you use a pasta pot with the built in strainer cook pasta, leave water in pot then use water to par boil chopped veggies to use either with pasta of in wraps or with pesto.

pb & j on wheat with fruit salad is a super easy meal.

cereal with soy milk and a piece of fruit
