My husband and I were bless with a really pretty kitchen/dining room table (apartment living) and while the wood itself is really pretty and nice the fabric on the chair seats is terribly dated and not in a cool retro way.  Has anyone reupholstered chair seats and is it terribly hard? We're both more of the DIY mindset to begin with so I'm just trying to get an idea of what we're getting into.

I don't think it's hard.  I have reupholstered my dining room chairs to match the valance in the dining room. Just measure the size of the seat, get the fabric, turn chair upside down, unscrew the seat, lay the fabric over the seat & staple gun on the back.  Put seat back on & screw the screws.....new dinning room chairs!
