This is SO pretty!  Lovely!  I'm definitely going to have to try this out.

I've seen mini rainbow cupcakes as well -- put the different colored batters in piping bags (you can totally use a sandwich bag and slice off a corner) to make the layered colors.

It turned out so good! Every time I try to make a layer cake it slips and cracks. I am going to try again with denser cake and thicker icing.
