Lunch today!  I didn't measure anything, so if you want to make it, you'll just have to wing it, too. Smiley

Ingredients
Eggs
Fresh spinach
Water
Garlic
Salt
Pepper
Cilantro
Milk

Steps
1 Preheat oven to 350.
2 Heat a bit of water, garlic powder, salt, pepper and cilantro in a frying pan.
3 Toss spinach leaves for just a couple of minutes & long enough to wilt them.
4 Add spinach to the bottom of an oven-safe dish (ramekins, if you've got them!).
5 Top spinach with eggs.  I used 1 whole egg and 3 egg whites.
6 Splash with milk -- just a tablespoon or so.
7 Sprinkle with same spices used to cook spinach.
8 Place bowl in oven and cook until whites are set, ~18 minutes.

Pair with a strawberry and spinach smoothie!  Eat. Smiley

I didn't spray my dish and had a little sticking, but nothing severe.  Top with asiago cheese, chopped tomatoes or sauteed onions...MmmM!
