I've tried a ton of different recipes for chicken curry (yellow Thai style) over the years and have never found one that I like even remotely as much as the kind in my fave Thai restaurants. I don't expect to totally replicate it at home, but until now I haven't even come close to a similar flavor! A friend told me her recipe (which I didn't write down, der) and I combined what I remembered from her with a recipe from Epicurious and my own preferences.
1 T Vegetable oil
1 large chicken breast*, chopped into whatever size chunk you prefer (8 oz to 1 lb is fine, I wanted less chicken this time)
1/2 large onion, chopped (about a cup)
1/2 teaspoon ground ginger
1/2 teaspoon granulated garlic
1/8 teaspoon red pepper flakes
1 can coconut milk, unsweetened (not light!)
1 cup carrot slices
1 large potato, chunked
1/4 cup tomato sauce (or 1 T tomato paste)
1 cup chicken broth*, or equivalent amount of bouillon paste and water)
1 1/2 T dark brown sugar, packed
1 T Mae Ploy Yellow Curry paste (I buy it in a restaurant supply store)
1/4 teaspoon siracha or other hot sauce to taste
Heat oil in large pan (that has a lid) and add onions and chicken. Season with ground ginger, granulated garlic, and red pepper flakes. Add curry paste. Cook on medium/medium-low heat until both are slightly browned (you don't have to cook chicken all the way through, it will finish cooking in the sauce). Add coconut milk, veggies, tomato sauce or paste, chicken broth (use more or less so that all the veggies and chicken are covered), brown sugar, siracha. Cover with lid and simmer a few minutes. When chicken is cooked through taste sauce and adjust seasoning if needed. Cover and simmer until potatoes and carrots are cooked through. At the end, salt to taste (and more hot sauce/siracha/pepper flakes if you want). Serve over rice.
Of course you can change the protein/veggies etc to fit your own tastes! I'm just excited to get a sauce that is close to what I've been searching for!
*Nowadays I mostly make this vegetarian. Omit the chicken and use veggie broth instead of chicken broth. Add additional veggies like sweet potatoes, bell peppers, mushrooms, zucchini, whatever you like!
