Here is a quick & easy one-pot meal that my family always enjoys so I thought I would share it with you! Grin


Ham & Cheese Noodles
~Serves 4~
1 package (12 oz.) egg noodles
1 package (16 oz.) frozen broccoli
1 cup bite-sized cubed fully cooked ham
1 cup (4 oz.) shredded mozzarella cheese
1 cup (4 oz.) shredded Parmesan cheese
1/3 cup butter
1/2 cup half-and-half
1/4 teaspoon each garlic powder, salt, and pepper

Bring a large pot (5 qt. or larger) of salted water to a boil.  Add noodles & broccoli to pot, and when back to a boil, cook noodles according to package instruction time.  Drain and return noodles and broccoli back to the pot.  Add remaining ingredients to pot, and stir mixture until butter and cheese is melted.  (You do not have to cook over any heat; the residual heat from the noodles & pot will do the job.)  Serve and enjoy! Grin

Yum, that looks delish, and if you want to enjoy this delish meal without all the guilt (but please, let's leave some in) you can use half the cheese, substitute 1/4 cup skim milk for the half and half, use a drizzle of olive or peanut oil instead of the butter.
