I combined two of our favorite foods for dinner tonight, lasagna and cupcakes!





I used my favorite lasagna recipe for these, World's Best Lasagna. I cooked the noodles aldente, cut them into thirds, sprayed cupcake tins with olive oil and then layered the noodles, cheese and sauce in this order...

- 1/3 noodle (pushed into tin)
- layer of ricotta
- 1/3 noodle (pushed into tin)
- spoonful of sauce
- slice of mozzarella
- layer of ricotta
- 1/3 noodle (lay on top)
- spoonful of sauce
- slice of mozzarella
- grated parmesan cheese

I eventually figured out that cutting the swirly edge off the noodles made the process easier.

I baked these for ~25 minutes in a 350 degree oven. They slid right out of the tin! The edges of the noodles turned out a bit crispy but still very yummy!

Oh wow these look good! I just started weight watchers, and am trying to figure out how to cook for hubby and for me, these look like they wouldn't be as fattening as regular lasagna since you're not eating as many layers of noddles.

And I could put regular cheese on his, and just a little on mine. I'm seriously really excited about trying this recipe!

The way I layered them, there is just about 1 noodle in each "cupcake". Some of them I made with more sauce and less cheese for Mr. Lime so you can definitely personalize them different ways - like lower fat cheese in some.

I think eating things in cupcake form is actually really helpful when you're trying to control portions. If I had a tray of lasagna in front of me, I'd eat half of it. This way - I only have one (maybe 2) servings.
